Calamari Frito / Fried CalamariSlice the calamari tubes into ¼ inch pieces. In a bowl, mix the egg and flour, season lightly with salt and pepper. In another bowl, mix the cornmeal and bread crumbs and also season lightly with salt and pepper. Heat a deep fryer or pan of oil to 350 degrees. Place the squid in the egg and flour mix, drain and then coat in the cornmeal/breadcrumb mixture. Fry quickly until golden brown but not overcooked, about 2 minutes. Drain excess oil and serve with marinara sauce or your choice of accompaniments.
